Mandarin Orange and Cranberry Matzo Brei

I must have matzo brei on the brain.  Here’s another take on an old classic Pesach dish. It’s sweet and DELISHIOSO! It makes a great snack or a sweet breakfast.

Serving Size: 2

Ingredients

4 matzos
1 ½ cup water
1 (11-ounce) can of mandarin oranges
1 cup cranberries
1 tablespoon sugar
½ teaspoon orange zest
½ tablespoon butter

Preparation

Break matzos into 1inch pieces, place in medium sized bowl.
Boil water.
Pour water over matzo and allow to soak for 2 minutes.
Drain excess water from matzo.
Add mandarin oranges, cranberries, sugar and orange zest to matzo and combine.
Heat a medium sized non-stick pan over medium to high heat.
Melt butter in pan.
Pour matzo mixture into pan and spread out evenly.
Cook on one side for 4 minutes and then flip to other side for 4 minutes or until brown.

Serve hot and enjoy.

“...It makes a great snack or a sweet breakfast…” Really loved this kind of meal especially if okay for breakfast because this is the time we need to start the day equipped with energy that can only be taken from healthy and sumptuous meal such as this.
