Grandma Lilly’s Matzo Stuffing
My Grandmother Lilly used to cook this up all of the time. Maybe that’s where I get my matzo gene.
Serving Size: 4
1 tablespoon olive oil
Preheat oven to 350°F
Boil water in a small saucepan.
While water is boiling heat olive oil in a medium skillet over medium heat, allow oil to heat about 30 seconds.
Add onions, mushrooms, and celery to the skillet and sauté, about 3 minutes.
Break matzo into small size pieces and place in a medium bowl. Once water is boiling remove from heat and pour over matzo. Allow matzo to soften in the water for two minutes and then drain water from matzo. Set aside.
Spray a medium size baking dish with cooking spray to coat all sides of the dish. You wouldn’t want your stuffing to stick would ya?
Add matzo to veggie mixture and mix to combine.
Place matzo/veggie mix in baking dish and bake uncovered for 15 to 20 minutes or until golden brown on top.
