Elvis’ Matzo Meal

This recipe was inspired by the king himself, Elvis.  I love him and this recipe is all shook up.  All shook up, get it?  His favorite sandwich was fried peanut butter, bananas, honey and bacon on white bread.

Serving Size: 1 as a meal, 2 as a snack

Ingredients

2 matzos
½ cup creamy peanut butter, divided *
1 banana, sliced thin
1 tablespoon honey
4 slices of bacon (optional) **
2 tablespoons unsalted butter

* Peanuts are kitniyot, meaning “legumes,” which are forbidden for consumption on Passover for Ashkenazic Jews.

** If included recipe is no longer kosher or vegetarian.

Preparation

Spread ¼ cup of peanut butter on 1 side of 1 matzo.

Place banana slices on top of peanut butter, covering the surface of the matzo.

Drizzle honey over bananas. 

Cook bacon in a small skillet for about 3 minutes, until crisp (1 ½ minutes on each side), or in the microwave for about 1 minute.  Drain and place on top of honey.  The bacon is optional and of course must be eliminated on Passover. 

Smear remaining ¼ cup of peanut butter on 1 side of the other matzo and place peanut butter side down on top of the first matzo like a sandwich.

Melt butter in a medium skillet over low to medium heat.

Place matzo sandwich carefully into pan.  Use a large spatula, you wouldn’t wanna drop it would ya?  Fry until golden brown, pressing down and with a spatula every 30 seconds or so.  When one side is brown flip it over and do the other side, about 2-3 minutes on each side. 

Cut into four squares and eat hot.

Bernie's Tip

A pizza cutter is the best weapon to use when attempting to cut matzo.

This recipe is hilarious. My daughter and I cried with laughter. We really liked omitting the bacon for passover. It is so hard to get kosher for passover bacon.  Loved it.
