Bernie’s Famous Matzo Pizza

This is my all time favorite.  It is not just some sauce and cheese slopped on matzo.  It is a whole to do with layering and olive oil…check it out. 

Serving Size: 1 as a meal, 4 as a snack or appetizer

Ingredients

1 tablespoon olive oil, divided
2 matzos
½ cup jarred pizza sauce, divided
2 tablespoons Parmesan cheese, divided
¾ cup shredded Mozzarella cheese, divided
¼ teaspoon dried oregano, divided
¼ teaspoon dried garlic powder, divided
¼ teaspoon dried crushed red pepper, divided

Preparation

Preheat oven to 350°F

Place 1 matzo on a baking sheet.

Use a basting brush and smear 1 side of matzo with a thin coating of olive oil, about 1 teaspoon.

Smear ¼ cup of tomato sauce on the matzo, spread evenly from end to end.

Sprinkle with 1 tablespoon of Parmesan cheese, 1/8 teaspoon each of oregano, garlic powder and crushed red pepper.

Cover matzo with ¼ cup of mozzarella cheese.

Place second matzo on top of first layer.  Repeat steps starting with the olive oil and ending with the remaining mozzarella cheese.

Bake for 10 minutes and then broil for 2 to 3 minutes depending on how brown you like your cheese.  I like mine nice and brown.  Gertie likes hers less brown.  Watch it carefully you don’t wanna burn it!!!

Cut matzo into four square “slices”

Cut it up with a pizza cutter of course.

Bernie would never just give us cheese and sauce… I can personally vouch for this pizza… I wouldn’t just eat it because I needed a matzo recipe, I would eat is because it is AWESOME.

Sounds YUMM O as Rachael Ray would say. I will definitely try this. Barry was “Bow Tie Barry” as a kid. Now he’s “Barry Pasta/Pizza Maslick” I think he has some Italian blood in him. He can have pasta and/or pizza every day. I will look forward to new recipes. Great idea. Rhoda
