2 Herb Matzo Brei

Who doesn’t love a little matzo brei….breakfast, lunch and dinner! My granddaughter Rachel enjoys matzo brei so much. I always make it for her when she comes by to visit on Sunday afternoons.

Serving Size: 2

Ingredients

2 matzos
½ cup water
2 eggs
1/8 teaspoon salt
½ teaspoon pepper
1 tablespoon parsley, finely chopped
1 tablespoon dill, finely chopped
1 tablespoon butter

Preparation

Break matzos into 1 inch pieces, place in medium sized bowl.
Boil water.
Pour water over matzo and allow to soak for 2 minutes.
Drain excess water from matzo.
Beat eggs in a medium sized bowl. 
Add salt, pepper, parsley, dill and matzo to egg mixture and combine well.
Heat a medium sized non-stick pan over medium to high heat.
Melt butter in pan.
Pour egg/matzo mixture into pan and spread out evenly.
Cook on one side for 4 minutes and then flip to other side for 4 minutes or until brown.
