Passover 2011

We are just about to sit down for a lovely Passover Seder.  I wanted to take a few minutes to wish all of you a happy and healthy Passover 2011. Cook any exciting and delicious matzo dishes this year?  Share them with me in the comment window below! I hope to hear from all of you real soon. I am so glad to be around my family tonight and I hope all of you are having a wonderful holiday.

Comments:

I am a gentile who purchased my first box of matzo for a Seder meal at church.
I tried the following recipe for the leftover matzo, and even my picky husband liked it.

MATZO CHEESE CRISP

1 piece of matzo
1 slice of pepper-jack cheese
1/4 cup shredded montery-jack cheese

Break the slice of pepper-jack cheese into small pieces and spread around on top pf the matzo.  Spread the montery-jack cheese on top of that.  Heat under a broiler until the cheese is melted.
This was good, but it was even better when we added hot sauce and some quacamole.
We won’t be throwing the matzo away after all.
