February 28 2009 Parmesan Matzo “Bread”This recipe is inspired from the Parm bagel at the Parkway Diner in Scarsdale, NY. If you go there you have to ask for it, it’s not on the menu. Order it with the Arugula salad. Eat this matzo version hot right out of the oven. Serving Size: 4-8 Ingredients4 matzos
PreparationPreheat Broiler to high Smear 1 side of each matzo with 1 teaspoon butter. Make sure you cover all four tops completely; you want your cheese to stick don’t you? Sprinkle the buttered side of each matzo with 1 tablespoon Parmesan cheese. Place matzos on cookie sheet and broil for 2-3 minutes until golden brown. Bernie's TipWatch the matzo carefully it can burn easily when you broil, believe me if I had a nickel for every time I burnt my matzo…oy vey would I be a rich man. Eat as an appetizer, as a side to a nice bowl of soup or on top a big salad. I really like to break mine up into sticks and dip them in my favorite pizza sauce.
