Recipe: Chicken Matzo Marsala

My mom used to make this all the time. I took her recipe and replaced the breadcrumbs with matzo crumbs.

This recipe is inspired from the Parm bagel at the Parkway Diner in Scarsdale, NY. If you go there you have to ask for it, it’s not on the menu. Order it with the Arugula salad. Eat this matzo version hot right out of the oven.
